This soup is jam-packed with flavor and super simple to make!

Packet of spicy italian pork sausage
1 large onion
2 peppers (colors of your choosing, I had 1 yellow and 1 red since I don’t like green peppers)
1 large can or carton of chicken stock
1 large sized can of diced tomatoes
Seasonings: salt, pepper (I use white or fresh ground black), italian seasoning, garlic powder

Cut open each sausage casing and brown the sausage in a large pot, breaking the sausage into bite size pieces as it cooks.

Add the onion and peppers when the sausage is about half to a third of the way cooked.

Add chicken stock and diced tomatoes. Season with the above seasonings to your liking.

Simmer, covered, for 20-30 minutes.
